Solution #1:
As this is Shared Mailbox email it can be setup using below instructions (it will use native Apple Mail app):
Please note: These instructions will not work for iOS 14. if you are on iOS 14 or if you upgrade to iOS 14, please use Outlook or OWA instead.
Go to Settings > Mail > Add account.
Select Other from the list of types.
Tap Add Mail Account.
Enter a name for the mail account (e.g. foodlab )
Enter the email address of the shared mailbox - foodlab@perennia.ca
Enter the your own email password
Enter a description for the mailbox (e.g. foodlab )
Tap Next.
Select IMAP
Fill in the following:
Under Incoming Mail Server
Host Name: outlook.office365.com
User Name: enter the your email address, followed by a \ and then the email address foodlab@perennia.ca (no space). Please note, if a single backslash does not work, try inserting two \\)
Password: Enter your email password.
Under Outgoing Mail Server
Host Name: smtp.office365.com
User name: Enter the your email address
Password: Enter your email password
Go to Settings > Mail > Add account.
Select Other from the list of types.
Tap Add Mail Account.
Enter a name for the mail account (e.g. foodlab )
Enter the email address of the shared mailbox - foodlab@perennia.ca
Enter the your own email password
Enter a description for the mailbox (e.g. foodlab )
Tap Next.

Solution #2: Install Microsoft Outlook App from Apple Store. Once set it should include additional shared folders.
